Prevalence of Listeria monocytogenes associated with risk factors in cheeses sold in the Mantaro Valley - Junín

Abstract

Listeria monocytogenes is a pathogen that has been most frequently found in milk and dairy products and has caused significant outbreaks of listeriosis in humans, therefore, this research aimed to establish the degree of association of the prevalence of Listeria monocytogenes in cheeses and the behaviour of associated risk factors. The study was cross-sectional and correlational in scope. Sixty samples of packaged cheese and 60 samples of bulk cheese collected from four food markets (Modelo, Mayorista, Antonio Lobato and Pio Pata) in the city of Huancayo were analysed and the data collection instrument used was the health surveillance form to evaluate risk factors. The microbiological analysis followed the method of the BAM/FDA, NTP202.195. Listeria monocytogenes was not found in packaged cheeses, in bulk cheeses its presence was 13.4% (8/60) being the Modelo supply market the one that presented the highest number of positive samples 11.7% (7/60). Regarding the risk factors for contamination in bulk cheeses, these were inadequate in 95.5% because they do not have acceptable conditions for sale, and for packaged cheeses 97% of the traders fulfilled the condition of having acceptable products but in other factors evaluated 67.5% did not comply. In conclusion, Listeria monocytogenes was present in a low percentage in bulk cheeses and there are associated risk factors for contamination that can act as a vehicle for the transmission of human listeriosis.
